FUNdamentals of Raw Living Foods

In this introductory workshop, you'll learn:
~ The importance of germinating nuts, seeds and grains.
~ Enzymatic nutrition for healing & rejuvenation; good reasons to limit cooking. Proper food combining for ease of digestion.
~ Helpful suggestions to make food prep easier and faster throughout the work week.
~ Kitchen gardening: sprouting, growing tender young greens, and wheat grass.
~ Fermenting foods: Rejuvelac for vital friendly flora.
~ Culturing: nut & seed cheeses, including cream cheese, yogurt, parmesan, and more.
~ Dehydration in place of cooking to retain valuable enzymes and delicate nutrients.
~ Food preparation techniques: using knives and other equipment to create texture.
~ Wrap 'n' roll methods for making great sandwich substitutes.
~ Breakfasts, lunches, and dinners, from appetizers to desserts.

During this introductory workshop, you will attend dozens of superb culinary presentations showing how to create a wide variety of delicious, easy-to-prepare recipes! Here is just a sampling of what you will see and taste: appetizers, fruit smoothies, soups, sauces, salad dressings, salads, simple entrees, pates, wraps and rolls, nut milks and luscious non-dairy cheese, crackers and other dehydrated goodies, amazing desserts, sprouting and kitchen gardening. Plus,essential equipment and supplies used in a raw food kitchen, and basic knife skills. FUNdamentals opens the door to a whole new world of fabulous raw organic cuisine...it's the first step toward a new culinary awakening!

All students must take this course or the two-day FUNdamentals class before attending the Essentials of Raw Culinary Arts and Chef/Instructor training with Living Light.

Essentials of Raw Culinary Arts

In this amazing hands-on class you will learn:
~ Essential techniques for healthy meal preparation using basic equipment common in a raw food kitchen (food processors, juicers, and dehydrators, including proper temperature settings for different applications.)
~ Basic knife technique (which knives are used for which tasks i.e., chopping, dicing, mincing, julienning, chiffonade.)
~ Basic measures and equivalents (i.e., teaspoons to tablespoons, ounces to cups, quarts to gallons, etc.)
~ How to follow recipes and convert cooked recipes to raw recipes.
~ Hands-on experience in making fruit smoothies and fresh garden soups, sauces, salad dressings, salads, simple entrees, wraps and rolls, pates, crackers, and desserts.
~ Understanding flavor dynamics.
~ Effective menu planning.
~ Basic raw nutritional science, food combining, and healthy living principles.

Science of Raw Food Nutrition I

The Living Light Culinary Arts Institute has teamed up with Raw Food Doctors™ Rick and Karin Dina to offer a 2-day comprehensive course on the science of raw food nutrition. Hours are from 10:00 am–6:00 pm Saturday and from 9:00 am–3:00 pm Sunday, with a one hour lunch break each day. See the drop down menu below for the class dates.


The course will cover hot topics in raw food nutrition including raw vegan sources of iron, calcium, protein, Vitamin B12, and essential fatty acids, as well as blood sugar regulation, pH balance, food changes from cooking, anti-inflammatory nutrition, weight management, anti-aging, longevity, and much more.


The Raw Food Doctors™ are known for their ability to make complex scientific concepts entertaining and easily understandable for the non-scientific person. They will also provide greater clarity, depth, and perspective for those with a science or nutrition background. This is a great course for chefs, health educators, or anyone else who wants to have the knowledge base to achieve optimum health by gaining a greater understanding of scientifically based raw food nutrition.


All participants will receive a comprehensive workbook including lecture notes, charts, graphs, and other essential information on raw food nutrition and a certificate of completion.  This 12-hour program leads toward an even more comprehensive Science of Raw Food Nutrition Health Educator Certification Course to be offered only once each year

This wonderful course will teach individuals to prepare raw and living gourmet foods with an added emphasis on teaching methods.

In the associate chef program, you'll take all the principles and techniques taught in the FUNdamentals and Essentials classes to a whole new level with more complex recipes and techniques incorporated in a hands-on setting.

The instructor portion of the program will empower you to plan, organize, and present live food classes for groups of all sizes. This 5-day advanced training course was designed to take your recipe development skills to new heights! RawFusion Gourmet Spa Cuisine and Recipe Development

RawFusion Spa Cuisine, created by Master Raw Vegan Chef Cherie Soria, was designed to support an active lifestyle and create a feeling of vitality.

This hands-on workshop focuses on specific recipes of the cuisine and on recipe development. You will learn to create your own delicious, light, uncomplicated, health-promoting recipes using the principles of RawFusion to create textures and flavors with a limited number of ingredients.

Raw Event Catering & Elegant Entertaining

This workshop focuses on catering everything from intimate dinner parties to large events. Whether you want to prepare a small appetizer party for 10 or cater an elegant wedding for 100, you will learn about:
~ Menu planning.
~ Budgeting, and contract negotiations.
~ Acquiring the supplies and equipment necessary.
~ Pricing and organizing the event.
~ Plating and garnishing, as well as, crafting beautiful table settings with creative center pieces and garnishes.
~ Managing your catering team.
~ And you will participate in actual hands-on raw event catering.


It's creative and fun for all levels of expertise. This class is also a Living Light Associate Chef showcase! And it's available three times a year.

Graduates will attend from around the country and share their favorite recipes for entertaining. We will feast on a variety of exquisite dishes prepared by top chef instructors.

This workshop has a definite emphasis on entertaining and we bring in our top food artists to show you how to create beautiful dinner parties and events.

Prerequisites: LLCAI Associate Chef training or equivilant is required. If you are not an LLCAI graduate, you are encouraged to send a resume and schedule an interview before registering.
